Ingredients:
2 bunch of Spinach
1 uup paneer cut into cubes
1 Inch ginger
2 big cloves of garlic
1/2 of a medium size onion
1 tomato
1 Tsp turmeric powder
1 Tbs Cumin powder
1 Tbs Coriander powder
1 Tbs Yogurt
Pinch of Garam masala
Chilli powder to taste
Green chili to taste
Salt to taste
Preparation:
Blanch the spinach in boiling water for 2 to 3 minutes.
Drain, put in cold water and keep aside to cool for sometime.
In a mixer put spinach, ginger, garlic and green chili and blend to a smooth purée and keep aside.
Heat the oil in a kadhai , add the onions and sauté on a medium flame till they turn translucent.
Add turmeric powder, cumin powder, coriander powder and sauté on a medium flame for 1 to 2
minutes.
Add the tomatoes and sauté till the mixture leaves oil, while stirring continuously.
Add the spinach purée and 2 tbsp of water, mix well and cook on a medium flame for 2 minutes.
Add the salt, garam masala and yogurt and mix well.
Add the paneer, mix gently and cook on a medium flame for another 1 to 2 minutes.Serve hot with rice or roti.
