Chitau Pitha (Rice and Coconut Pancakes)

Ingredients:
1 Cup Rice soaked overnight
1 Cup Shredded Coconut
Water as needed
Salt to taste
Vegetable oil as needed

Preparation:
Make a fine paste of coconut and rice. Add salt and leave it for 1 hr.
Add water to make a thin batter out of it.
Heat oil in a pan, pour some batter into it, and cover it.
After sometime remove from flame.
Serve hot with curry or chutneys or go wild have with chicken curry.
